Ingredients: All Spice, Bay Leaf, Cinnamon, Cloves, Cumin, Ginger, Nutmeg, Oregano, Paprika, Parsley and Pepper.
RECIPE
PORTUGUESE STYLE CHICKEN
Ingredients:
1 Whole Chicken, 1/3 cup Lemon Juice, 2 Tbsp Olive Oil, 3 cloves Garlic – crushed, 2 tsp Leena Portuguese Spice, salt to taste.
Method:
1) Split chicken and open flat. Remove any backbones by cutting either side of them.
2) Place chicken in a roasting tray.
3) Whisk lemon juice, olive oil, garlic, Leena Portuguese Spice, and salt in a bowl. Pour over chicken.
4) Cover and refrigerate overnight.
5) Roast the chicken at 200°C on grill for 50 minutes, or until golden and well cooked.
6) Keep basting with marinade in between cooking.
