PAKORA (FRITTERS) MASALA SPICE WITH RECIPE

Ingredients: Carome seeds, Cilantro, Coriander, Cumin, Fennugreek leaves, Garam masala, Ginger, Mango powder, Mint, Paprika, Pomegranate seeds, Turmeric and Yellow mustard.
RECIPE
MIXED VEGETABLE PAKORA RECIPE
Ingredients
300g Gram Flour (Besan) or Pea Flour, 2 medium Onions finely chopped or thinly sliced, 1 medium Potato diced or grated, ½ cup chopped Spinach or Silverbeet, ¾ cup chopped Coriander or Cilantro, 1 green Chilli finely chopped (optional), 1 ½ tsp Leena Pakora Masala, Salt to taste, Oil for frying.
Method
1) Combine chopped onion, potatoes, spinach, salt, chilli, coriander and gram or pea flour in a bowl. Add 1 ½ tsp Leena Pakora Masala. Add enough water to make a thick batter. Mix well and keep aside.
2). Heat oil in a frying pan or wok. Take small portion of batter with a spoon and drop into the hot oil.
3) Deep fry until golden brown and crispy.
4) Remove from oil and serve with chutney or sauce.
For a variety of pakoras you can make Paneer, Tofu, Eggplant, Cauliflower, Cabbage, or any vegetable of your choice.
